The quail is a mid-sized birds really famous in France. Many preparation can be used to cook a quail. However in West-South, the tradition is to cook with graps and foie gras to have the perfect balance between sweet and sour.

Served with a frying pan full of green asparagus.

The meal will taste better served with a glass of white wine (for example: Sauternes).
